Preparation
Caramelize the almonds. Heat the sugar in a saucepan over medium heat and stir until it melts and turns brown bubbling.
When it bubbles, remove the pan from the heat and pour the almonds one at a time. Turn them over so they are well impregnated. *
Pass the almonds to a lightly greased tray and let them stand until they cool and harden.
Cut the figs into four and put 8 pieces on each plate.
Thickly slice the almonds with your fingers.
Divide the blue cheese, the almonds and sprinkle the figs with a drizzle of olive oil.
Serve with hot baguette bread.
