Octopus Skewer with Red Fruit Sauce

  • 100 grams strawberries
  • 100 grams raspberries
  • 100 grams blackberries
  • 250 milliliters red wine
  • 100 milliliters brandy
  • 100 grams sugar
  • 30 grams shallot
  • 15 grams butter
  • 1 octopus
  • 200 grams strawberries, in halves
  • 1 pinch salt
  • 1 pinch pepper
  • 1 pinch paprika

  • For the Sauce: Sauté the shallot in butter. Add the quartered strawberries, raspberries, blackberries, and sauté.
  • In a separate pan, flambé the brandy and add it to the sauce. Blend and strain, adjust seasoning, and set aside.
  • For the Skewer: Using skewer sticks, alternate between octopus and strawberries. Season with salt, pepper, and paprika. Cook until golden brown to achieve the desired color.
  • Remove from the pan and drizzle with the red fruit sauce.
