Delicious oysters baked in the oven with a mixture of cheese, butter, breadcrumbs, spinach, and parsley. Oysters Rockefeller are very famous in New Orleans, USA, where they were created.
Melt the butter in a skillet and add the garlic, cooking for 2 minutes. Place the breadcrumbs in a bowl and add half of the garlic butter and set aside.
Add the shallots and spinach to the remaining garlic butter and cook for 3 minutes until the spinach is cooked. Add the Pernod and let it evaporate. Season with salt and pepper and a dash of Tabasco. Let it reduce a little.
Mix the breadcrumbs with olive oil, Parmesan cheese, and parsley. Season with salt and pepper.
Preheat the oven to 450 F (230 C).
Place 1 tablespoon of the spinach mixture on each oyster and top with 1 tablespoon of the breadcrumb mixture. Put coarse salt on a baking tray and arrange the oysters on the salt (to keep them from moving around). Bake the oysters in the oven for 10-15 minutes until golden. Serve with lemon and Tabasco sauce.
