Melt the butter in a skillet and add the garlic, cooking for 2 minutes. Place the breadcrumbs in a bowl and add half of the garlic butter and set aside. Add the shallots and spinach to the remaining garlic butter and cook for 3 minutes until the spinach is cooked. Add the Pernod and let it evaporate. Season with salt and pepper and a dash of Tabasco. Let it reduce a little.
