1/2 cups rice vinegar, (for the rice)
5 tablespoons sugar, (for the rice)
1 teaspoon salt, (for the rice)
4 cups sushi rice, (for the rice)
300 grams smoked salmon
1 bunch chives, finely chopped
soy sauce, for garnish
1 lime, (its juice)
sesame seeds, for garnish

For the rice: Rinse the rice with a strainer until the water runs clear.
Place the rice in a pot with 4 1/4 cups of water and let it soak for 20 minutes.
Place the pot over medium heat until it starts to boil, cover, and cook on low heat for 20 minutes.
In a deep bowl, mix the vinegar with the sugar and salt until both are dissolved.
In a large deep bowl, place the rice and season with rice vinegar. Gently mix with a wooden spoon.
For the sushi: On a cutting board, place the salmon and cut into strips about 3 cm wide.
Place 2 tablespoons of rice at the beginning of each salmon strip and roll it up.
Garnish with sesame seeds and green onions and place on a serving platter.
Prepare the soy sauce for dipping by adding a bit of lemon and garnishing with sesame seeds and green onions.
