Preheat the oven to 120 degrees Celsius. Place flour in a deep container. In another container, beat the eggs. In a third container, mix the breadcrumbs with thyme.
Season the cheese with salt and pepper and coat each cheese ball in the flour, then the egg, and then the breadcrumbs.
In a small skillet, heat the oil over medium heat until a little breadcrumb fries quickly when placed in the oil.
Fry the balls (4 at a time) until golden brown for about 2 minutes. Remove from the oil and place on a plate with paper towels. To make them less greasy, bake for 15 minutes afterwards.
