Fried quesadillas are the typical Mexican dish that you can prepare at any time. Serve them with delicious guacamole, refried beans, and red sauce.

2 cups corn masa flour
1 1/2 cups water
1/2 tablespoons salt
350 grams Oaxaca cheese
vegetable oil, for frying

In a deep bowl, combine the corn flour, salt, and water. Knead until you feel a smooth and soft texture.
Cut two plastics to cover the inside of the tortilla maker, place a ball of dough weighing about 50 grams, and flatten it to make it thin.
Fill each quesadilla with a little Oaxaca cheese. Fold the quesadilla over the cheese and press the edges together well.
In a skillet, heat the oil for frying for 5 minutes over high heat.
Fry each quesadilla until golden and remove from the oil. Dry with paper towels to remove excess grease.
Serve the quesadillas with sauce or guacamole.
