For the dough, mix both flours, the 1/8 cup of oil, water, salt and baking powder. Knead with your hands until incorporated. Add more water if necessary.
Cut two plastics that cover the inside of the tortilla making machine, place a ball of dough of approximately 50 grams and flatten it to make it thin.
Fill each quesadilla with a bit of Oaxaca cheese. Fold the quesadilla over the cheese and bring the edges together.
Fry each quesadilla until golden brown and remove from the oil. Dry with paper towels to remove excess grease.
Accompany the quesadillas with salsa or guacamole.
