Goat Cheese with Chipotle and Mushrooms

  • 2 teaspoons canola oil
  • 1/4 kilos button mushrooms, mixed, thinly sliced
  • 1/4 teaspoons salt, fine seasoning
  • 150 grams goat cheese, crumbled
  • 150 grams Monterey Jack cheese, shredded jack cheese
  • 1 1/2 cups spinach
  • 1/2 cups red onion, chopped
  • 2 chipotle chiles in adobo sauce, seedless and chopped

  • Preheat the oven to 180 degrees Celsius. In a large skillet, heat the oil over medium heat, add the mushrooms, salt, and cook; stir frequently until the mushrooms have released their juice and are dry and slightly golden, approximately 10 minutes.
  • Place the mushrooms in a baking or gratin dish. In a large bowl, combine the goat cheese, jack cheese, spinach, and chipotle peppers, stirring until all ingredients are well mixed. Spread the mixture over the mushrooms and bake until it starts to bubble, approximately 25 minutes.
