Preparation
Preheat the oven to 180 degrees centigrade. In a large skillet put the oil over medium heat, add the mushrooms, salt and cook; stir frequently until the mushrooms have released the juice and are dry and lightly browned, about 10 minutes.
Place the mushrooms in a baking dish or au gratin. In a large bowl combine the goat cheese, Jack cheese, spinach and chipotle chillies, stir until all the ingredients are well mixed. Divide the mixture over the mushrooms and bake until it begins to bubble, about 25 minutes.
