Golden Potato Taquitos

  • Pam® Original, canola oil spray
  • 240 grams potato, cooked and peeled
  • 12 tortillas
  • 2 tomatoes
  • 1 teaspoon garlic, chopped
  • 2 teaspoons barley, finely chopped
  • 2 teaspoons parsley, finely chopped
  • 1/3 cups sour cream, low in fat
  • 30 grams panela cheese, grated
  • salt
  • pepper

  • Mash the potatoes and season with salt and pepper.
  • Heat the tortillas, fill them with the potato, and roll the tacos; if necessary, use a toothpick to keep them closed.
  • Spray each taco with 2 shots of PAM® Original and bake for 15 minutes at 180°C or until golden.
