Golden Tacos with Ricotta

  • 150 grams requesón, (preferably from the market)
  • 1 tomato
  • 1/3 onions
  • 2 serrano chiles, green
  • 1 teaspoon vegetable oil, for the ricotta
  • 1 cup vegetable oil, for frying the tacos
  • 1/2 kilos corn tortillas

  • Dice the tomato, onion, and chili into small cubes.
  • Put the oil in a pan; when you see it is slightly watery, it means it is hot. First, add the onion; once it is translucent, add the tomato with the chilies.
  • Once the tomato has changed to a more orange color, turn off the heat and add the ricotta.
  • Add salt and proceed to assemble the taquitos. Once assembled, place a clean pan on low heat with a cup of oil, and start frying the taquitos until golden.
