Grate the previously washed and peeled carrots.
Slice the onion into julienne strips and finely chop the garlic.
Heat a skillet and sauté the onion and garlic cloves.
Add the carrot and cook for a few minutes until it is cooked through.
Place the carrot in a bowl and mix with the ricotta cheese.
Then, using the mixture, start making the tacos and fry them in oil.
