Grilled Nachos

  • 8 cups tortilla chips
  • 2 cups Manchego cheese, shredded
  • 1/2 cups red onion, finely chopped
  • 1 Jalapeño chile
  • 1 tomatillo, finely chopped
  • 1/2 cups sour cream

  • Heat the grill to medium-high.
  • In a tray with edges, place a large sheet of heavy-duty aluminum foil folded twice at the edges. Spread the tortilla chips on the bottom of the tray; top with cheese, onion, and chili.
  • Place the nachos in the center of the grill. Turn off the burners directly under the tray; cover the grill. Grill for 5 minutes or until the cheese melts.
  • Add the tomatoes on top and serve the nachos with sour cream.
