Grilled Vegetable Ciabatta with Brie

  • 5 slices pumpkin
  • 1 pinch curry powder
  • 1 pinch pepper
  • 1 teaspoon mayonnaise
  • 3 slices Brie cheese
  • 1 ciabatta roll
  • 1 cup arugula
  • 3 cherry tomatoes, in halves
  • 1 teaspoon olive oil, mixed with balsamic vinegar

  • Take a few slices of your favorite vegetables such as zucchini, bell pepper, onion, carrot (season with: a little curry powder, garlic salt, and freshly ground pepper)
  • In a hot grill, add olive oil, and then the vegetable slices until they have golden grill marks.
  • Slice the ciabatta in half and spread a little mayonnaise, add the vegetables, and cover with the brie, place the top of the ciabatta back on and return it to the grill to brown the bread a little.
  • Cut diagonally and serve accompanied by arugula salad and cherry tomatoes with olive oil, balsamic vinegar, freshly ground pepper, and a little salt.
