Guacamole Stuffed Onion Rings

  • 2 avocados, for the guacamole
  • 1/3 cups lime juice, for the guacamole
  • 1/4 cups fresh cilantro, finely chopped, for the guacamole
  • 1/4 cups tomato, cut into small cubes, for guacamole
  • 1/4 cups bacon, fried, finely chopped, for guacamole
  • 1 tablespoon garlic powder, for the guacamole
  • 1 pinch salt and pepper, for the guacamole
  • 2 white onions, cut into thick rings
  • 1 cup flour, for breading
  • 2 eggs
  • 1 cup panko, for breading
  • 1 cup vegetable oil, for frying
  • sour cream

  • In a bowl, mix all the guacamole ingredients, season to your liking, and set aside in the refrigerator.
  • Place the onion rings on a greased tray and fill with guacamole, freeze until the center is solid, about 1 and a half hours.
  • Coat the frozen rings with flour, dip in egg, and bread with panko. Set aside.
  • In a deep pot, heat the oil and fry the breaded rings, removing excess fat. Serve and enjoy.
