Start by making the pizza dough. In a deep bowl, mix the hot water with the yeast and let it rest for 5 minutes.
In a food processor, mix the flour, sugar, and salt. Add the yeast and olive oil and mix until you have a sticky dough.
Sprinkle a clean surface with flour and knead the dough until it no longer sticks.
Place the dough in a deep container coated with olive oil. Cover with plastic wrap and allow the dough to rise for 1 hour; the dough will triple in size.
Preheat the oven to 220 degrees Celsius.
Prepare 2 small circles or one large one with parchment paper and grease the paper with a little olive oil and flour.
Work the dough to obtain a thin circle and place it on the base.
Cover your base with tomato sauce, sliced tomatoes, basil, and cheeses. Bake for 10 minutes or until the dough looks slightly golden.
