  • 1 teaspoon garlic powder
  • 1 1/2 teaspoons thyme, powder
  • 1 teaspoon oregano
  • 1/2 teaspoons black pepper

  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 4 tablespoons olive oil
  • 1/3 cups water

  • Mix the almond flour together with whole wheat flour, garlic powder, thyme powder, oregano, black pepper, dried chives, sugar, and salt in a bowl until the ingredients are evenly combined.
  • Pour the olive oil and water gradually, knead with your clean hands, making small taps on the dough and slapping it repeatedly, as this will help achieve a smooth and elastic consistency.
  • Roll out the dough on a floured surface using a rolling pin; you can divide it into two beforehand to make this process easier and do it by portion. You should obtain a rectangle 3 mm thick; be patient in this step, as the dough slightly retracts when elastic. Square off this rectangle with a knife or pizza cutter, then transfer the dough square to a tray lined with baking paper or wax paper and let it rest for 5 minutes.
  • While the dough rests, chop the almonds into small pieces with a knife. Preheat the oven to 180 °C.
  • Once you have everything ready, brush the dough square with egg, sprinkle with almonds, and cut the dough into squares of approximately 3x2 cm. Bake at 180 °C for 25 minutes and be sure to rotate the tray halfway through cooking for even browning.
  • Use your almond crackers to accompany dips, salads, or soups.
