  • 2 cups pink shrimp, medium
  • 1 cup pineapple, diced
  • 1 1/2 tablespoons chipotle chile in adobo sauce, ground
  • 1 tablespoon fresh cilantro, finely chopped
  • 1/4 cups cucumber, diced
  • 1 tablespoon lime juice
  • 1 tablespoon mustard, yellow

  • 1 jicama, sliced into thin sheets
  • 1 avocado, sliced, for garnish

  • In a bowl, mix the contents of the Freshly by Eva Coleslaw, 420 G with the shrimp, pineapple, chipotle, cilantro, cucumber, lime juice, mustard, and coleslaw dressing, and season with salt and pepper.
