Jocoque Taquitos

Delicious taquitos filled with panela and strips bathed in jocoque and pepper sauce baked in the oven.

  • 1 kilo corn tortillas
  • 1/2 liters jocoque
  • 1 can red bell pepper, in oil
  • panela cheese, in strips
  • 4 anaheim chili, or roasted poblanos, peeled and sliced
  • oil , as needed
  • salt , to taste
  • cheeses, meltable cheese for decoration

  • Drain the pepper and blend part of it with the jocoque, season to taste.
  • Put a little oil in a saucepan to heat and pass the tortillas to soften.
  • Soak each tortilla in the jocoque and pepper mixture and place a slice of panela and a few strips of chili inside, roll up and arrange in a baking dish to form the first layer.
  • Soak the taquitos with a little of the mixture and add some meltable cheese between layers and at the end decorate with strips of pepper and meltable cheese.
  • Bake for 20 minutes in an oven at 250 degrees Celsius, or until the cheese is slightly golden.
