Latkes

A very delicious recipe for fried potato pancakes. They are traditionally eaten during Hanukkah.

  • 1 1/2 kilos potato
  • 2 tablespoons salt
  • 3/4 cups vegetable oil
  • 1 yellow onion
  • 1 egg
  • 2 tablespoons flour
  • 1 teaspoon baking powder
  • 1 pinch pepper
  • 1/2 cups sour cream
  • 1 bunch chives

  • Preheat the oven to 120°C.
  • Place a colander in your kitchen sink.
  • Peel the potatoes and grate them in a food processor. Place the grated potato in the colander and sprinkle with a little salt. Let it rest for 10 minutes.
  • Now, in the food processor, process the onion, egg, flour, baking powder, pepper, salt, and one tablespoon of oil.
  • Add the potatoes to the processor and mix for 10 seconds. Use a spoon to incorporate the ingredients that stuck to the sides and process for 10 more seconds.
  • Prepare the pan with oil over medium heat and a large plate with paper towels.
  • Use a large soup spoon to place the latke mixture into the oil and fry for 2-3 minutes on each side. Remove from the oil and place on a paper towel.
