Ingredients

30 portions
  • 1 1/2 kilos potato
  • 2 tablespoons salt
  • 3/4 cups vegetal oil
  • 1 yellow onion
  • 1 egg
  • 2 tablespoons flour
  • 1 teaspoon baking soda
  • 1 pinch black pepper
  • 1/2 cups sour cream
  • 1 bunch chives

Preparation

Heat the oven to 120 ° C.
Place a strainer on the sink in your kitchen.
Peel the potatoes and rake them in a food processor. Place the grated potato in the strainer and sprinkle with a little salt. Let them sit for 10 minutes.
Now in the food processor process the onion, the egg, the flour, the baking powder, the pepper, the salt and a spoonful of oil.
Add the potatoes to the processor and mix for 10 seconds. Use a spoon to incorporate the ingredients left on the sides and process for 10 more seconds.
Prepare the pan with the oil over medium heat and a large dish with paper towels.
Place with a large soup spoon the mixture of the latkes in the oil and fry for 2-3 minutes on each side. Take out the oil and place on the paper towel.

PRESENTATION

Serve accompanied by sour cream and chives.
