Mac & Cheese Croquettes

These delicious mac & cheese croquettes are perfect for a snack or meal for the little ones at home. They are very creamy inside and have a crispy crust outside. A fun way to treat your kids.

  • 1 cup elbow pasta
  • 2 liters water
  • 1 tablespoon salt
  • 1 tablespoon butter, cut into cubes
  • 1/2 cups bacon, finely chopped
  • 1/2 cups cow's milk
  • 1 cup sour cream
  • 1 cup cheddar cheese
  • 1 cup Manchego cheese
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 pinch salt and pepper
  • 2 cups cheddar cheese, finely grated
  • 3 San Juan® eggs
  • 1 cup flour
  • 2 cups breadcrumbs
  • 2 cups vegetable oil
  • tomato sauce

  • Boil water in a pot, add salt and pasta, cook until soft, drain and set aside.
  • Heat a pot over medium heat with the butter, add the bacon and fry until golden. Add the milk, cream, cheeses, garlic powder, onion powder and cook until you obtain a homogeneous mixture. Season with salt and pepper, add the pasta and cook for one more minute to combine. Chill.
  • Mix the previous preparation with the grated cheddar cheese and, using an ice cream scoop, form balls with the Mac & Cheese on a tray.
  • In a bowl, beat the pieces of Huevo San Juan® with salt and pepper.
  • Coat the balls by dipping them in flour, then in the Huevo San Juan® mixture, and finally in the breadcrumbs.
  • Heat the oil in a pot over medium heat and fry the balls until golden brown. Drain on paper towels and serve with tomato sauce.
