These delicious mac & cheese croquettes are an ideal snack or meal for the little ones at home. They are very creamy on the inside and have a crispy crust on the outside. A fun way to give your children a treat.

Ingredients

10 portions
  • 1 cup elbow pasta
  • 2 liters Water
  • 1 tablespoon salt
  • 1 tablespoon butter, cut into cubes
  • 1/2 cups bacon, finely chopped
  • 1/2 cups milk
  • 1 cup sour cream
  • 1 cup cheddar cheese
  • 1 cup manchego cheese
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 pinch salt and pepper
  • 2 cups cheddar cheese, finally grated
  • 3 San Juan® Eggs
  • 1 cup flour
  • 2 cups ground bread
  • 2 cups oil
  • to taste tomato sauce

Preparation

Bring the water to a boil, add salt and pasta; cook, strain and reserve.
Heat a pot over medium heat with the butter, add the bacon and fry until golden brown. Add the milk, cream, cheeses, garlic powder, onion powder and cook until a homogeneous mixture. Season with salt and pepper; add the pasta and cook another minute. Cool.
Mix the previous preparation with the grated cheddar cheese and with a scoop, form balls with the Mac & Cheese and reserve them on a tray.
In a bowl beat the San Juan® Eggs with salt and pepper.
Pass the small balls through flour, the San Juan® Eggs mixture and the ground bread.
Heat the oil in a saucepan over medium heat and fry the balls until golden brown. Drain the excess on absorbent paper and serve with tomato sauce.

PRESENTATION

Serve the croquettes with tomato sauce.

TIPS

Remember that the oil must be very hot, so when you fry the croquettes hey don't absorb too much oil.
