1/2 kilos artichoke, small (or if you don’t have canned artichokes)
1/2 cups olive oil
6 cloves garlic
3 tablespoons fresh parsley, chopped
2 tablespoons lime juice
2 tablespoons white vinegar
1 tablespoon black peppercorn
1 tablespoon coarse salt
1 tablespoon thyme

If using fresh artichokes, remove the first 4-5 layers of leaves until they have a tender color.
In a steamer, cook the artichokes for 30 minutes or until well cooked.
Bake the garlic for 30 minutes at 180 degrees Celsius. Remove from the oven, peel, and chop.
Prepare a glass container and mix the olive oil, lemon juice, white vinegar, salt, pepper, thyme, and parsley. Mix well and add the chopped garlic.
Add the artichokes and mix well. Cover the container and allow to marinate for at least 2 hours before serving.
