Marinated Artichokes

This Mediterranean appetizer is rich, easy, and very healthy. The touch of vinegar and lemon with the artichokes is delicious.

  • 1/2 kilos artichoke, small (or if you don’t have canned artichokes)
  • 1/2 cups olive oil
  • 6 cloves garlic
  • 3 tablespoons fresh parsley, chopped
  • 2 tablespoons lime juice
  • 2 tablespoons white vinegar
  • 1 tablespoon black peppercorn
  • 1 tablespoon coarse salt
  • 1 tablespoon thyme

  • If using fresh artichokes, remove the first 4-5 layers of leaves until they have a tender color.
  • In a steamer, cook the artichokes for 30 minutes or until well cooked.
  • Bake the garlic for 30 minutes at 180 degrees Celsius. Remove from the oven, peel, and chop.
  • Prepare a glass container and mix the olive oil, lemon juice, white vinegar, salt, pepper, thyme, and parsley. Mix well and add the chopped garlic.
  • Add the artichokes and mix well. Cover the container and allow to marinate for at least 2 hours before serving.
