Marinated Olives

A Mediterranean snack with a twist. These olives need to be prepared a couple of days in advance and left in their marinade of lemon, tarragon, and curry.

  • 1/2 kilos green olives
  • 1 clove garlic, finely chopped 1 clove garlic, finely chopped

  • 1 tablespoon red wine vinegar
  • 1 lime 1 lime
  • 1/2 teaspoons hot pepper flake
  • 1/2 teaspoons dried tarragon
  • 1/4 teaspoons curry powder

  • Drain the olives and rinse well with cold water. Cover them with cold water and let them soak for between 5 min. and 5 hours.
  • In a bowl, mix the garlic, olive oil, vinegar, lemon zest, lemon juice, crushed red pepper flakes, tarragon, and curry powder.
  • Add the olives and stir to combine. Make sure the olives are fully coated in the marinade.
  • Let sit for 1 day and refrigerate one day before serving.
