Marinated Olives

A Mediterranean snack with a twist. These olives need to be prepared a couple of days in advance and left in their marinade of lemon, tarragon, and curry.

1/2 kilos green olives
1 clove garlic, finely chopped
1/2 cups olive oil
1 tablespoon red wine vinegar
1 lime
1/2 teaspoons hot pepper flake
1/2 teaspoons dried tarragon
1/4 teaspoons curry powder

Drain the olives and rinse well with cold water. Cover them with cold water and let them soak for between 5 min. and 5 hours.
In a bowl, mix the garlic, olive oil, vinegar, lemon zest, lemon juice, crushed red pepper flakes, tarragon, and curry powder.
Add the olives and stir to combine. Make sure the olives are fully coated in the marinade.
Let sit for 1 day and refrigerate one day before serving.
