A Mediterranean snack with innovation. These olives have to be prepared a couple of days in advance and left in their lemon, tarragon, and curry marinade.

Ingredients

6 servings
  • 1/2 kilo of green olive
  • 1 clove of garlic finely chopped
  • 1/2 Cup of olive oil
  • 1 tablespoon of red wine vinegar
  • 1 green lemon
  • 1/2 teaspoonful of dry chili flake
  • 1/2 teaspoonful of dry tarragon
  • 1/4 of teaspoonful of curry powder

Preparation

Drain the olives and rinse well with cold water. Cover them with cold water and let them soak for 5 min. and 5 hours.
In a bowl, mix garlic, olive oil, vinegar, lemon zest, lemon juice, dry chili flakes, tarragon, and curry powder.
Add the olives and stir to mix. Make sure the olives are completely covered in the marinade.
Let stand for 1 day and put in the refrigerator one day before serving
