1 onion, chopped

1 cup refried beans, black
30 corn husks
1 1/2 cups water, warm
2 cups masa dough
1/2 cups lard
1/2 cups sour cream
1 cup Manchego cheese, grated
1 1/2 cups mole sauce, black

Heat a pan and add the onion, wait until it becomes translucent.
Add the black beans and the mole, stir.
Cover the tamale pot with the corn husks.
Mix the water with the corn dough, the lard, and the sour cream until achieving the desired consistency.
Place a bit of the dough on the corn husks and in the middle serve two tablespoons of the bean mixture.
Add a little grated manchego cheese.
Roll the tamale and tie the top with a bit of the same corn husk or a ribbon.
Add water to the tamale pot and cook for 1 hour or until they pull away from the leaves.
Serve the tamales with green or red salsa.
