Calvillo Tostadas

Pork rind and pickled tostadas with guava sauce and árbol chiles. Calvillo is a municipality in the State of Aguascalientes, considered the capital of guava, and its main livelihood is the production of sweets and products derived from this fruit, hence the title of the recipe.

  • 200 grams pickled pork skin, with carrot and onion
  • 6 guavas
  • 1 bunch fresh cilantro 1 bunch fresh cilantro

  • 280 milliliters Oleico® gourmet provencal blend oil

  • Blend the ingredients for the guava sauce (3 guavas, garlic, 2 árbol chiles, 1 dried chipotle chile, salt, pepper, and orange juice). Set aside.
  • Clean 4 guavas (remove the seeds) and cut them into thin strips along with the pork rinds, onion, and carrot. Mix, seasoning with Aceite Oléico® Provençal Mix, and let it rest to concentrate the flavors.
  • Place the tostada on the plate, add a base of avocado, and then add the pickled mixture.
  • Finally, sprinkle a little cilantro and add sauce to taste.
