Light Esquites

  • 4 ears corn, on the cob
  • 6 tablespoons FAGE® Total 0% greek style yogurt
  • chile powder, to taste
  • 3 limes
  • 5 sprigs epazote
  • 1/2 cups Cotija cheese, grated
  • 1 liter water
  • salt
  • 5 slices lime, for garnish

  • Boil the corn in boiling water for 5 minutes, remove from heat. When they are cool enough, cut the corn kernels from the cob (about 4 cups).
  • In a pot, add water, salt to taste, the epazote, and the corn kernels. Let it boil until the corn kernels are well cooked.
  • In a bowl, add the FAGE Total 0% Greek Yogurt, chili powder, and lime juice, and mix well.
  • Serve 4 tablespoons of esquites and two tablespoons of the FAGE Total 0% Greek Yogurt mixture in cups or deep plates.
  • Sprinkle with a little cheese and garnish with lime slices.
