1 cup corn masa flour, nixtamalized
water, necessary amount
1 pinch pepper
1 pinch salt
3 tablespoons butter
1 cup requesón
2 Poblano chiles
1 pinch cumin
2 tablespoons onion, finely chopped

Add salt, pepper, and cumin to the nixtamalized corn flour.
Add baking powder to help them puff up.
Add the onion, which should be finely chopped.
Add butter or margarine, if preferred.
Mix perfectly and gradually add water. You should obtain a mixture with a compact texture.
Make small balls with the dough and place between two plastic bags to flatten with the help of a plate and form the gordita.
Roast the poblano peppers, place them in a bag to sweat, peel them, and finally remove the stem, veins, and seeds. Cut them into strips.
Mix the strips with the ricotta and season with salt. Reserve the filling for the gorditas.
Preheat the griddle and cook the gorditas without adding fat.
Cook on one side and then flip to the other side.
Open and fill with the strips and ricotta. The filling can be changed for any other.
Serve.
