Light Gorditas

A recipe for gorditas that does not require oil, they are delicious and will satisfy the craving for this exquisite Mexican snack.

  • 1 cup corn masa flour, nixtamalized
  • water, necessary amount
  • 1 pinch pepper
  • 1 pinch salt
  • 3 tablespoons butter
  • 1 cup requesón
  • 2 Poblano chiles
  • 1 pinch cumin
  • 2 tablespoons onion, finely chopped

  • Add salt, pepper, and cumin to the nixtamalized corn flour.
  • Add baking powder to help them puff up.
  • Add the onion, which should be finely chopped.
  • Add butter or margarine, if preferred.
  • Mix perfectly and gradually add water. You should obtain a mixture with a compact texture.
  • Make small balls with the dough and place between two plastic bags to flatten with the help of a plate and form the gordita.
  • Roast the poblano peppers, place them in a bag to sweat, peel them, and finally remove the stem, veins, and seeds. Cut them into strips.
  • Mix the strips with the ricotta and season with salt. Reserve the filling for the gorditas.
  • Preheat the griddle and cook the gorditas without adding fat.
  • Cook on one side and then flip to the other side.
  • Open and fill with the strips and ricotta. The filling can be changed for any other.
  • Serve.
