  • 2 kilos masa dough
  • 2 kilos tomatillo
  • 1/2 kilos shrimp, fresh, cooked, and peeled
  • 6 Jalapeño chiles
  • 3 cloves garlic
  • 4 sprigs fresh cilantro
  • 1 1/2 onions
  • 1 tomato
  • vegetable oil
  • olives, chopped
  • pickled chiles, diced
  • achiote
  • salt

  • Mix the dough with the achiote dissolved in a little vinegar or water and a pinch of salt. Chop half an onion and sauté it in oil; add the diced shrimp, olives, pickled chilies, and red tomato. Make a small tortilla with the dough, fill it with the prepared shrimp, and fold it like a turnover. Fry in oil and let drain on absorbent paper. Dip them in the green sauce; remove and serve. To prepare the sauce, blend the peeled and cooked tomatoes with half an onion, garlic, cilantro, and chilies; fry everything together. Serve.
