Tlayuda with Bean and Cheese

  • 4 tortillas, (tlayudas)
  • 2 tablespoons lard
  • 1 can refried beans
  • 250 grams Oaxaca cheese, shredded
  • 2 avocados
  • 2 handfuls fresh cilantro, (the leaves)
  • red salsa, (valentina)
  • salt

  • Spread the asiento (pork lard) over the tlayudas.
  • Heat the beans in a skillet and add them to the tlayuda.
  • Mix the Oaxaca cheese with the valentina sauce and add the cheese to the tlayudas.
  • Slice the avocados and serve them on top of the tlayuda.
  • Sprinkle the cilantro leaves and season with a little salt.
  • Heat on a griddle or skillet.
