Yucatecan salbutes are sold in the market where various flavors can be enjoyed, such as black filling, turkey, or oriental pickled. Yucatecans often eat them for lunch accompanied by a good cup of hot chicken broth.

100 grams flour
salt, to taste
lard, or corn oil for frying
3 cups ground duck meat, or shredded roasted chicken
2 cups lettuce, finely sliced
1 red onion, sliced or chopped in vinegar
1 tomato, sliced
1 Habanero chile, ground with vinegar

The dough is mixed very well with the flour and salt, and medium-sized tortillas are made by hand or in a press, not too thin.
They are fried in hot lard. The salbutes should puff up when fried.
Once fried, they are drained on paper towels and topped with lettuce, chicken, onion, and some slices of tomato.
They are served accompanied by ground habanero chili with vinegar or sour orange for everyone to serve to their liking.
