Mexican Sopes

Prepare these Mexican Sopes. It's an easy recipe you can make for breakfast or as a snack. For this recipe, you can make the dough from scratch and hydrate it or buy ready-made sopes to fill. The great thing about these sopes is that you can fill them with your favorite ingredients. You can make a healthy version by using nopales as a base instead of corn dough.

  • 4 cups masa harina
  • 2 1/2 cups water
  • 1/2 teaspoons salt
  • 1 1/2 cups refried beans
  • 1 1/2 cups chicken, shredded
  • 1 cup requesón
  • 1 cup romaine lettuce, chopped
  • 1 cup green salsa
  • vegetable oil

  • Mix the maseca, water, and salt. Knead until the dough sticks.
  • Divide into 20 portions and flatten to make thick tortillas. With your fingers, lift the edges of each sope.
  • Heat a griddle and cook the sopes on each side for about 1 minute or until lightly browned.
  • Fry the sopes in a little vegetable oil and place on absorbent paper towels.
  • Fill each sope with beans, shredded chicken, cheese, lettuce, and a little green salsa.
