Grease a deep dish with 1 tablespoon of olive oil and place the pizza dough in it. Cover with a towel and let it relax for 45 minutes.
Preheat the oven to 220 degrees Celsius and position the racks in the upper third and lower third of the oven.
In a food processor, blend the tomato, garlic, oregano, 2 tablespoons of oil, and season with salt and pepper.
Prepare two baking sheets with the remaining olive oil. Divide the pizza dough into 4 and then each quarter into 3 equal parts (you will have 12 dough portions).
With your hands, shape each piece of dough into a 7 cm circle and place them on the baking sheet.
Place a tablespoon of the tomato sauce on each pizza base and spread it a bit, leaving the edges without sauce.
Now add the ingredients to your pizzas, first a little arugula, then a bit of pepper and serrano ham, and finally a bit of mozzarella cheese and parmesan cheese.
Bake the pizzas for 12 minutes or until the cheese starts to bubble. Remove from the oven and serve.
