Mini Pizzas with Arugula and Peppers

Ingredients

4 portions
  • 400 grams Pizza dough
  • 5 tablespoons olive oil
  • 400 grams tomtato, whole (400 grams)
  • 4 cloves garlic
  • 1 teaspoon oregano
  • 2 cups arugula, or spinach
  • 1/2 cups Bell pepper, cut in julienne
  • 50 grams Serrano ham, in slices
  • 1 cup mozzarella cheese
  • 1/4 cups parmesan cheese
  • to taste black pepper, to taste

Preparation

Grease a deep bowl with 1 tablespoon of olive oil and place the pizza dough there. Cover with a towel and allow it to relax for 45 minutes.
Preheat the oven to 220 degrees Celsius and position the grids in the upper third and lower third of the oven.
In a food processor process the tomato, garlic, oregano, 2 tablespoons of oil, and season with salt and pepper.
Prepare two baking trays with the remaining olive oil. Divide the dough for the pizza into 4 and then each quarter into 3 equal parts (you will have 12 dough portions).
With your hands you have a circle of 7 cm with each dough and place it on the baking sheet.
Place a tablespoon of the tomato sauce on each pizza base and spread a little leaving the edges without sauce.
Now add the ingredients to your pizzas, first a little arugula, then some bell pepper and serrano ham and finally some mozzarella cheese and Parmesan cheese.
Bake the pizzas for 12 minutes or until the cheese begins to bubble. Remove from oven and serve.

PRESENTATION

You can decorate the pizzas with some fresh basil leaves.

TIPS

You can find the pizza dough in many supermarkets. If you can not find arugula, you can make this recipe with spinach.
