Molotes are a Mexican snack made with corn dough, mixed with potato or lard, similar in preparation to a quesadilla or fried empanada, but the method of enclosing the filling is different and of course, the shape of the snack.
Mix the dough with three mashed potatoes and salt to taste. Knead until well combined and if needed, add a little water, being careful not to overdo it. Dice the other 3 potatoes and fry them until golden with salt.
Divide the dough into 18 equal pieces and form balls with your hands, shaping them into a thick gordita. Place it in the palm of your hand and fill with cheese or meat.
Seal the edges by overlapping them and seal the ends to prevent the filling from leaking out. Fry them in plenty of hot oil and drain on paper towels. Prepare a sauce with tomatoes, chiles, cilantro, and garlic clove. Or sauce to taste.
Serve them hot, drenched in sauce and garnished with diced fried tomato and potatoes and cheese.
