Ingredients: 500 grams masa dough; 6 potatoes, cooked diced; 3 potatoes, mashed; 250 grams queso fresco, grated or crumbled; 250 grams skirt steak, cooked and chopped; 3 tablespoons vegetable oil, as needed; 6 tomatillos, large; 2 serrano chiles; 1 clove garlic; 1 tomatillo, ripe diced; 1 sprig fresh cilantro, to taste

Mix the dough with three mashed potatoes and salt to taste. Knead until well combined and if needed, add a little water, being careful not to overdo it. Dice the other 3 potatoes and fry them until golden with salt. Divide the dough into 18 equal pieces and form balls with your hands, shaping them into a thick gordita. Place it in the palm of your hand and fill with cheese or meat.
