36 tortilla chips, corn
2 red beefsteak tomatoes, chopped and seedless
1/4 cups fresh cilantro
1/4 tablespoons salt
1 tablespoon vegetable oil
1 onion, finely chopped
1 clove garlic
1/2 tablespoons cumin
1 can refried beans
4 cups Manchego cheese, or shredded yellow
6 pickled Jalapeño chiles, chopped

Preheat the oven to 200 degrees Celsius.
On two baking sheets, spread the tortilla chips in a single layer.
In a deep bowl, mix the tomato, cilantro, and salt.
In a skillet over medium heat, heat the oil and sauté the onion, garlic, and cumin for 5 minutes.
Pour the onion mixture over the tomato mixture and mix well.
Place 1/2 tablespoon of beans on each tortilla chip and sprinkle cheese over all the chips. Bake for 5 minutes or until all the cheese has melted.
Remove from the oven, place on a platter, and pour over them the tomato mixture with onion and jalapeños.
