Nachos

A delicious recipe that is perfect for parties or watching soccer games. Kids and men love it.

  • 36 tortilla chips, corn
  • 2 red beefsteak tomatoes, chopped and seedless
  • 1/4 cups fresh cilantro
  • 1/4 tablespoons salt
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 1 clove garlic
  • 1/2 tablespoons cumin
  • 1 can refried beans
  • 4 cups Manchego cheese, or shredded yellow
  • 6 pickled Jalapeño chiles, chopped

  • Preheat the oven to 200 degrees Celsius.
  • On two baking sheets, spread the tortilla chips in a single layer.
  • In a deep bowl, mix the tomato, cilantro, and salt.
  • In a skillet over medium heat, heat the oil and sauté the onion, garlic, and cumin for 5 minutes.
  • Pour the onion mixture over the tomato mixture and mix well.
  • Place 1/2 tablespoon of beans on each tortilla chip and sprinkle cheese over all the chips. Bake for 5 minutes or until all the cheese has melted.
  • Remove from the oven, place on a platter, and pour over them the tomato mixture with onion and jalapeños.
