Ingredients

20 servings
  • 36 tortilla chips of corn
  • 2 beefsteak tomatoes chopped and seedless
  • 1/4 of Cup of fresh coriander
  • 1/4 of tablespoon of Salt
  • 1 tablespoon of vegetable oil
  • 1 onion finely chopped
  • 1 clove of garlic
  • 1/2 tablespoon of cumin
  • 1 can of refried beans
  • 4 cups of Manchego cheese or yellow grated
  • 6 pickled jalapeños pickled

    Preparation

    Pre-heat the oven to 200 degrees Celsius.
    In two trays to horenar put the totopos in a single layer.
    In a deep bowl, mix the tomato, cilantro and salt.
    In a pan over medium heat heat the oil and brown the onion, garlic, and cumin for 5 minutes.
    Pour the onion mixture over the tomato mixture and mix well.
    Put 1/2 teaspoon of beans on each totopo and sprinkle the cheese on all the tortilla chips. Cook for 5 minutes or until all the cheese has melted.
    Remove from the oven, place on a platter and pour the mixture of tomato and onion and the jalapeños over them.
