Nopal Salad on Toast

Nopal salad is very nutritious and delicious. This recipe, where it is placed on toast, is great for serving as an appetizer/snack.

  • 10 nopales, large roasted and cut into strips
  • 3 tomatillos, chopped
  • 1 clove garlic
  • 1/4 onions, finely chopped
  • 3 tomatoes, chopped
  • 1/2 cups white vinegar
  • 1/2 cups olive oil
  • 1/2 cups fresh cilantro, freshly chopped
  • salt, to taste
  • 12 tostadas, corn
  • 1/4 cups queso fresco

  • In a pot, bring 6 cups of water to a boil with the tomatillo, chopped garlic, and sliced nopal. Cook for 25 minutes.
  • Rinse the nopales with cold water to remove the slime and chop into small cubes.
  • Mix the nopales in a deep bowl with the onion, tomato, and cilantro.
  • Add white vinegar, olive oil, and salt to taste, and mix well.
  • Place the nopal salad in a deep serving bowl and sprinkle with fresh cheese.
