Oriental Avocado Bruschetta

A delicious vegetarian snack, baguette bread topped with avocado slices, diced cucumber, and a rice vinegar dressing.

  • 1 baguette
  • 2 avocados
  • 2 cucumbers, seedless
  • 4 tablespoons rice vinegar
  • 1 tablespoon sesame seeds
  • 1 pinch salt

  • Cut the baguette into three equal pieces and slice them in half. Lightly toast them in the oven.
  • Cut the avocado in half, remove the pit with a knife, and slice it. Place the slices on the baguette and drizzle a little lemon over the avocado to prevent it from browning.
  • In a bowl, mix the diced cucumber, rice vinegar, sesame seeds, and salt.
  • Place the seasoned cucumber on top of the avocado and serve the bruschettas.
