Patatas Bravas Recipe

  • 1/4 cups onion, finely chopped, for the brava sauce
  • 1 tablespoon garlic, finely chopped, for the brava sauce
  • 1 tablespoon sweet paprika, for the brava sauce
  • 1 tablespoon hot paprika, for the brava sauce
  • 1 tablespoon cornstarch, for the brava sauce
  • 1 cup beef broth, for the brava sauce

  • Peel the potatoes and cut them into large cubes or wedges, then soak them in a bowl with cold water and ice to prevent oxidation. Set the potatoes aside this way until ready to use.
  • Heat enough olive oil in a deep frying pan for deep frying. Then, drain the potatoes very well and fry them over medium-low heat for 20 minutes, as this will help cook the potatoes thoroughly inside.Remove them from the oil, drain the excess well, and let them rest covered for 20 minutes, as this will help make the potatoes softer.
  • Make the brava sauce! Pour a little olive oil into a pot and cook the onion and garlic over medium-low heat for 6 minutes or until lightly browned. Add the sweet paprika, hot paprika, and cornstarch, then stir to combine as best as possible. Then, pour in the beef broth and season with salt.Cook the brava sauce over medium heat until it thickens. Remove from heat and let it cool slightly.
  • Fry the potatoes again in the same olive oil, but now at a higher temperature, for approximately 20 more minutes, making sure they do not brown too much. Once the fried potatoes are ready, drain them very well again.
  • Serve the patatas bravas with brava sauce; they are perfect for snacking!
