Melt the butter in a skillet over medium heat, add the onions and salt, and cook for 5 minutes or until the onion is soft. Add the peaches and mix. Lower the heat and cook for 30 minutes. Season with salt and pepper and remove from heat.
Preheat the oven to 180 degrees Celsius. Place the puff pastry sheet on a clean surface and cut into 16 squares. Cut the squares in half to obtain 32 triangles. Place them on a baking sheet.
Place a tablespoon of the peach mixture on each triangle and sprinkle a little cheese and thyme. Bake for 15 minutes and serve. 3
