Pepilocas Popsicles

For a craving, prepare these delicious cucumber popsicles filled with tasty snacks like chips, spicy gummies, Japanese peanuts, jicama, and grated carrot. A unique way to present the classic pepilocos.

  • 3 cucumbers
  • 1 cup chamoy
  • 1 cup chile powder
  • 2 limes, just the juice
  • 1/4 cups spicy gummies
  • 1/4 cups cracker nuts
  • 1/4 cups jicama, grated
  • 1/4 cups carrot, grated
  • 1/4 cups corn chips, (churrumais)
  • 1/4 cups corn chips, (takis)
  • 1/4 cups tamarind candies
  • 1/4 cups mango, diced

  • On a cutting board, using a knife, peel and cut the cucumbers in half. Use a spoon to hollow out the cucumber without reaching the bottom completely. Insert a popsicle stick at the base.
  • Cover the cucumber popsicles with chamoy and chili powder. Set aside.
  • For the filling, in a bowl mix a bit of liquid chamoy with chili powder, lime juice, gummies, peanuts, jicama, carrot, churros, chili sticks, beans, and mango.
  • Using a spoon, fill the pepilocas with the mix, add a bit of chamoy on top, and enjoy.
