Plantain Frittata with Brie Cheese

A delicious hot appetizer that your guests will love. This frittata is made with bananas, red onion, basil, and brie cheese.

  • 3 plantains, ripe (not black)
  • 1/2 red onions, in julienne
  • 1 teaspoon basil, dry
  • 6 eggs
  • 100 grams Brie cheese

  • 1 cup vegetable oil, Mazola Olive and Soy

  • Peel the bananas and slice them (at an angle so they are oval-shaped).
  • Pour Mazola Olive and Soy oil into a skillet, heat over medium heat, and fry the banana slices.
  • Drain the bananas and set aside.
  • Beat the eggs in a bowl. Season, add the basil and half of the onion.
  • In a round skillet, pour two tablespoons of Mazola Olive and Soy oil, heat, and pour in the eggs, tilting the skillet to cover the entire surface, as if making an egg tortilla.
  • Lower the heat to medium, and when the eggs begin to set, place slices of cheese, then spiral or rose-shaped fried banana slices, and the other half of the onion in julienne.
