Potato Nachos with Pastor

If you love nachos but find the typical tortilla chips boring, cook these nachos with slices of crispy baked potatoes, prepared with a delicious garlic dressing with buffalo sauce and mayonnaise. They are also served with pastor meat, guacamole, cream, and pico de gallo. They will drive you crazy!

  • 5 potatoes, With skin, cut into medium-thick slices
  • 3 tablespoons vegetable oil
  • 1 tablespoon paprika
  • 1 tablespoon garlic, finely chopped
  • 1 tablespoon pepper, for the potatoes
  • 1 tablespoon salt, for the potatoes
  • 1/4 cups buffalo sauce, for the potatoes
  • 1/4 cups Best Foods® real mayonnaise, for the potatoes
  • 1/4 cups bacon, cut into small cubes
  • 1/4 red onions, chopped
  • 500 grams pork, with pastor
  • 1 cup asadero cheese, shredded
  • guacamole, for serving
  • sour cream, for serving
  • pico de gallo, for serving
  • fresh cilantro, chopped, for serving
  • cheddar cheese, melted, for serving

  • Preheat the oven to 200° C.
  • For the potatoes, in a bowl mix the potatoes with the oil, paprika, garlic, pepper, salt, buffalo sauce, and Best Foods® mayonnaise.
  • Place them on a baking tray and bake for 30 minutes, flipping occasionally, until cooked and crispy. Remove from the oven and set aside.
  • Heat a skillet over medium heat, cook the bacon until golden and it releases its fat, add the red onion and the pastor pork. Cook for 10 minutes, season, and set aside.
  • In a cast-iron skillet, place the potatoes around the edges, in the center add the pastor meat preparation and sprinkle with the asadero cheese, making sure to fill the gaps. Bake for 10 minutes or until the cheese melts.
  • Serve immediately with guacamole, sour cream, pico de gallo salsa, cilantro, and cheddar cheese.
