Potato Omelette Tapas

A Spanish snack/appetizer made with potato and egg. It is very easy to prepare and delicious.

  • 1 kilo potato, medium boiled, peeled, and sliced thin.
  • 2 cups onion, chopped
  • 10 eggs, hill country fare
  • 1 tablespoon salt
  • 1 cup vegetable oil, Brand Economax
  • 4 tablespoons serrano ham, chopped
  • 4 tablespoons red bell pepper, peeled and chopped

  • In a large skillet, heat the oil and add the potato, onion, bell pepper, and salt.
  • Cook over medium heat for 30-45 minutes until the vegetables are well cooked.
  • Pour into a bowl and let cool for 5-10 minutes.
  • Add the beaten eggs and serrano ham to the bowl and mix.
  • Put a tablespoon of oil in the large skillet and add the egg and potato mixture.
  • Simmer for 10 minutes. Remove from heat, cover, and let rest for 10 minutes.
  • Invert the omelette onto a plate and return to the skillet to cook the other side for 15 minutes on low heat.
