Potato Omelette Tapas

1 kilo potato, medium boiled, peeled, and sliced thin.
2 cups onion, chopped
10 eggs, hill country fare
1 tablespoon salt
1 cup vegetable oil, Brand Economax
4 tablespoons serrano ham, chopped
4 tablespoons red bell pepper, peeled and chopped

In a large skillet, heat the oil and add the potato, onion, bell pepper, and salt.
Cook over medium heat for 30-45 minutes until the vegetables are well cooked.
Pour into a bowl and let cool for 5-10 minutes.
Add the beaten eggs and serrano ham to the bowl and mix.
Put a tablespoon of oil in the large skillet and add the egg and potato mixture.
Simmer for 10 minutes. Remove from heat, cover, and let rest for 10 minutes.
Invert the omelette onto a plate and return to the skillet to cook the other side for 15 minutes on low heat.
