Potato Pancakes

A very simple traditional recipe from Germany. Potato pancakes work as a dish and as a base for serving smoked fish, dips, and much more.

  • 500 potatoes
  • 1 onion, small
  • 1/4 cups flour
  • 1 egg
  • salt
  • pepper
  • vegetable oil, for frying
  • chives, for garnish

  • With a food processor or grater, finely grate the potato and onion.
  • Place the potato and onion in a cloth and squeeze to remove all excess water.
  • In a deep bowl, mix the flour, egg, and season with salt and pepper.
  • Add the potato and onion mixture and mix well.
  • In a skillet over medium heat, heat 4-5 tablespoons of vegetable oil.
  • Place a tablespoon of the potato mixture and flatten with the spoon, browning for about 2 minutes on each side. Remove from the skillet and place on paper towels to absorb excess oil.
  • Serve the pancakes garnished with chives or accompanied by cream or a dip.
