With a food processor or grater, finely grate the potato and onion.
Place the potato and onion in a cloth and squeeze to remove all excess water.
In a deep bowl, mix the flour, egg, and season with salt and pepper.
Add the potato and onion mixture and mix well.
In a skillet over medium heat, heat 4-5 tablespoons of vegetable oil.
Place a tablespoon of the potato mixture and flatten with the spoon, browning for about 2 minutes on each side. Remove from the skillet and place on paper towels to absorb excess oil.
Serve the pancakes garnished with chives or accompanied by cream or a dip.
